Effects of Reduced Salt
Relationship between AJI-NO-MOTO®(MSG) and sodium
Questions have been raised about the sodium content of MSG. Contrary to popular misconception, MSG does not contribute significant levels of sodium to the average daily diet. MSG contains only 1/3 the amount of sodium as salt (Nacl) and is used at levels far less than salt. Based on these two factors, MSG contributes about 1/20 – 1/30 the amount of sodium as salt to our daily meals. Human sensory tests have shown that when the salt level in food is reduced, food acceptability decreases. However, by using a small amount of MSG, sodium chloride intake can be reduced by as much as 20–30% while maintaining food acceptability.
