Dried Bonito and Dried Kelp

Wipe the kelp with a damp cloth. Be sure not to submerge the kelp in water, flavors will drain out.

Make a couple of slits in the kelp. Soak in water for 30 - 60 minutes. |

Heat up and, just before the water boils, remove the kelp. Add dried bonito flakes and turn off the heat. |

Let the dried bonito flakes sink to the bottom. Strain through a paper towel. |
