How to make DASHI (1)

Ingredients
[ MISOSHIRU
for 4 servings ]
Amounts
dotWater 4 Cups (800ml)
dotDried Kelp 10g
dotDried Bonito flakes 20g

[ How to make ]
(1)  Wipe the kelp with a damp cloth. Be sure not to submerge the kelp in water, flavors will drain out.

(2)  Make a couple of slits in the kelp. Soak in water for 30 - 60 minutes.

(3)  Heat up and, just before the water boils, remove the kelp. Add dried bonito flakes and turn off the heat.

(4)  Let the dried bonito flakes sink to the bottom. Strain through a paper towel.
