Falafel with Umami
Plant-based croquette of mashed chick peas or fava beans seasoned with sesame seeds.

Ingredients
- 450g (1 pound) dry chickpeas
- 1 onion
- 1/4 cup fresh coriander
- 3-5 garlic cloves
- 2 tsps salt
- 2 tsps cumin
- 1 tsp coriander seeds
- 1 pinch cardamom
- 1/4 tsp AJI-NO-MOTO®(MSG)
- 3 ounces (100g) sesame seeds
Mohamra sos (filling)
- 2 onions
- 3-5 garlic cloves
- 4-5 red chilis
- 3 ounces (100g) chili paste
- 1/2 pound (200g) fresh tomatoes
- 1 tsp salt
- 3/4 tsp AJI-SHIO® flavoured black pepper
- 1/4 tsp AJI-NO-MOTO® (MSG)
- 1 tbsp olive oil
Directions
Mixture
Soak chickpeas in cold water overnight.
Place chickpeas, onion, garlic and coriander into food processor.
Add cumin, cardamom, coriander seed, and salt.
Blend thoroughly.
Add AJI-NO-MOTO®.
Filling
Heat up olive oil, add onion and garlic.
Add chopped red chilis.
Add salt, AJI-SHIO® Flavoured Black Pepper, water and chili paste.
Let filling cool down for at least 30 minutes.
Heat oil to 180 C/ 350 F.
Frying
Form flat patties by using falafel tools.
Insert some filling.
Finish off by dipping patty with sesame seed.
Fry till golden brown.
