Potato Cakes with Sesame Sauce

Ingredients

  • 800 grams potatoes
  • a pinch of salt
  • a pinch of black pepper
  • 100 cc soy milk
  • 35 grams katakuriko potato starch
  • vegetable oil
  • 600 cc dried vegetable dashi
  • 40 cc tamari soy sauce
  • 30 cc koikuchi soy sauce
  • 40 cc mirin
  • 30 grams sugar
  • 100 grams nerigoma sesame paste

Directions

  1. Cut potatoes in half and steam for 20 minutes. Peel the skin and mash the potatoes. Add salt and black pepper. When the mashed potatoes are cool to touch add soy milk and potato starch and mix well.

  2. Make small flat-shaped cakes with the mashed potatoes. Coat the cakes with potato starch and panfry in oil until golden brown.

  3. In a separate pan, add the dried vegetable dashi, soy sauce, mirin, and sugar and simmer for 5 minutes. Add the sesame paste and simmer for another 5 minutes

  4. To serve dress the potato cakes with the sesame sauce.
