Tapioca Flour Pão de Queijo

This popular Brazilian snack is a kind of bread and prepared with tapioca flour and cheese.

Ingredients

  • 3/4 pound (400g) of sweet tapioca flour “polvilho doce”
  • 1.5 cup (300ml) whole milk
  • 1/2 cup (100ml) oil
  • 1 large egg
  • 1 tsp salt
  • 1/2 cup grated parmesan cheese
  • 1 cup grated “minas” standard cheese (“minas padrão”) or your favorite cheese

Directions

  1. Put tapioca flour into a medium bowl and reserve.

  2. Combine milk and oil in a saucepan and bring to a boil over medium heat.

  3. Carefully, pour the milk mixture over the tapioca flour and mix it well. Let it sit for a
    few minutes and knead until lukewarm.

  4. Add the egg, salt, parmesan cheese and “minas” cheese. Keep kneading until dough is
    smooth and uniform (the mixture will be sticky).

  5. Preheat the oven to 180c/350F.

  6. Shape dough into small balls and place them on a lightly greased baking sheet and
    bake for 20 minutes, until slightly golden on the bottom.
