Vegetarian Shakshuka

Eggs poached in a perfectly-spiced vegetarian stew of tomatoes and green and red bell peppers are easy and delicious dish for lunch or dinner.

Ingredients

  • 1 tbsp olive oil
  • 1 onion
  • 1 clove garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 4 tomato
  • 2 tbsps tomato paste
  • 6 egg
  • 1/2 tbsp parsley
  • 3/4 tbsp salt
  • 1/4 tbsp AJI-SHIO® Flavoured Black Pepper or pepper
  • 1/2 tbsp AJI-NO-MOTO® (MSG)

Directions

  1. Dice onion, garlic and tomato.

  2. Slice bell peppers.

  3. Heat oil in a skillet and gently cook onion, garlic, bell peppers and tomato.

  4. Season with salt, AJI-NO-MOTO®, AJI-SHIO® Flavoured Black Pepper and tomato paste.

  5. Gently crack eggs into skillet over tomato and add AJI-NO-MOTO®.

  6. Cook for 7 to 10 minutes.

  7. Season with AJI-SHIO® Flavoured Black Pepper.

  8. Garnish with chopped parsley.
