Olive Oil Roasted Chicken with Lemon Zest
Ingredients
- 4 chicken pieces
- 1 cup olive oil
- 5 ounces (150g) yogurt
- 1/2 cup lemon juice
- 1 lemon zest
- 2 tbsps salt
- 1 tbsp coriander powder
- 1 tbsp dried thyme
- 5 cloves garlic
- 2 carrots
- 1 cauliflower
- 1 zucchini
- 1 broccoli
- 1 tbsp AJI-NO-MOTO® (MSG)
- 2 tbsps pepper
Directions
Combine yogurt, garlic, lemon juice, salt, coriander powder, olive oil, dried thyme, coriander and lemon zest. And add AJI-NO-MOTO® and pepper.
Mix 1 and chicken pieces together and set aside for 30 minutes.
Cut all the vegetables and put randomly in a baking tray.
Season 3 evenly with salt, pepper & olive oil.
Place chicken pieces evenly on 4. Add water and olive oil.
Cover with aluminium foil and bake 220°C/430℉ for 30 minutes.
Remove the cover and bake for another 10 minutes.
