Olive Oil Roasted Chicken with Lemon Zest

Ingredients

  • 4 chicken pieces
  • 1 cup olive oil
  • 5 ounces (150g) yogurt
  • 1/2 cup lemon juice
  • 1 lemon zest
  • 2 tbsps salt
  • 1 tbsp coriander powder
  • 1 tbsp dried thyme
  • 5 cloves garlic
  • 2 carrots
  • 1 cauliflower
  • 1 zucchini
  • 1 broccoli
  • 1 tbsp AJI-NO-MOTO® (MSG)
  • 2 tbsps pepper

Directions

  1. Combine yogurt, garlic, lemon juice, salt, coriander powder, olive oil, dried thyme, coriander and lemon zest. And add AJI-NO-MOTO® and pepper.

  2. Mix 1 and chicken pieces together and set aside for 30 minutes.

  3. Cut all the vegetables and put randomly in a baking tray.

  4. Season 3 evenly with salt, pepper & olive oil.

  5. Place chicken pieces evenly on 4. Add water and olive oil.

  6. Cover with aluminium foil and bake 220°C/430℉ for 30 minutes.

  7. Remove the cover and bake for another 10 minutes.
