Vegetarian Shakshuka
Eggs poached in a perfectly-spiced vegetarian stew of tomatoes and green and red bell peppers are easy and delicious dish for lunch or dinner.
Ingredients
- 1 tbsp olive oil
- 1 onion
- 1 clove garlic
- 1 green bell pepper
- 1 red bell pepper
- 4 tomato
- 2 tbsps tomato paste
- 6 egg
- 1/2 tbsp parsley
- 3/4 tbsp salt
- 1/4 tbsp AJI-SHIO® Flavoured Black Pepper or pepper
- 1/2 tbsp AJI-NO-MOTO® (MSG)
Directions
Dice onion, garlic and tomato.
Slice bell peppers.
Heat oil in a skillet and gently cook onion, garlic, bell peppers and tomato.
Season with salt, AJI-NO-MOTO®, AJI-SHIO® Flavoured Black Pepper and tomato paste.
Gently crack eggs into skillet over tomato and add AJI-NO-MOTO®.
Cook for 7 to 10 minutes.
Season with AJI-SHIO® Flavoured Black Pepper.
Garnish with chopped parsley.
