Bouchées à la Reine

Bouchées à la Reine is a classic French starter for a special occasion. You are gonna love this crispy outside and creamy inside finger food.

Ingredients

  • 2 pounds puff pastry
  • 5 ounce chicken pieces
  • 5 shiitake mushrooms
  • 1 onion
  • 2 garlic cloves
  • 1/2 cup cooking cream
  • 3 ounces butter
  • 1 ounce flour
  • 1 tsp salt
  • 1 tbsp white pepper
  • 2 tbsps Ac’cent or umami seasoning AJI-NO-MOTO®
  • 2 eggs
  • Parsley for garnish

Directions

  1. Fry onion, garlic, shitake mushroom, chicken pieces with butter.

  2. Season with salt, white pepper and AJI-NO-MOTO®.

  3. Add cooking cream.

  4. Heat butter with flour into roux.

  5. Add roux and cook for another 3 minutes.

  6. Layer 2 pieces of puff pastry and brush egg wash on the surface.

  7. Bake 200℃/390℉ for 15 minutes.

  8. Spoon over filling.

  9. Garnish with parsley.
