Easy and Umami Nasi Lemak

Ingredients

For Coconut Rice and Condiments

  • 1.2 pounds (550g) rice grain
  • 2 1/2 cups water
  • 1 tsp salt
  • 1 cup coconut milk
  • 2 pandan leaf
  • 1/2 tsp AJI-NO-MOTO® (MSG)
  • 1 cucumber, sliced
  • 3 eggs, boiled
  • 3 1/2 ounces anchovy, fried
  • 3 1/2 ounces peanuts, fried

For Sambal

  • 1 tbsp tamarind paste
  • 1 1/2 hot water
  • 2 tsp salt
  • 4 tbsps sugar
  • 1 tsp AJI-NO-MOTO® (MSG)
  • 5 shallot, sliced

For blended ingredients

  • 3/4 cup cooking oil
  • 1 ounce dried chili
  • 3 onion
  • 3 shallot
  • 3 cloves garlic
  • 1/2 tbsp shrimp paste

Directions

  1. Put in rice grain, water, salt, coconut milk, pandan leaves and AJI-NO-MOTO® into a rice cooker and let it cook.

  2. Heat a pan and sauté blended ingredient until oil rises to the top.

  3. Pour in tamarind paste and hot water mixture, stir well.

  4. Add in AJI-NO-MOTO®, sugar and salt.

  5. Simmer for 15 minutes.

  6. Add in sliced shallots and cook until they soften.

  7. Serve cooked rice together with sambal, hardboiled egg, cucumber, peanut and anchovy.
