Easy and Umami Nasi Lemak

Ingredients
For Coconut Rice and Condiments
- 1.2 pounds (550g) rice grain
- 2 1/2 cups water
- 1 tsp salt
- 1 cup coconut milk
- 2 pandan leaf
- 1/2 tsp AJI-NO-MOTO® (MSG)
- 1 cucumber, sliced
- 3 eggs, boiled
- 3 1/2 ounces anchovy, fried
- 3 1/2 ounces peanuts, fried
For Sambal
- 1 tbsp tamarind paste
- 1 1/2 hot water
- 2 tsp salt
- 4 tbsps sugar
- 1 tsp AJI-NO-MOTO® (MSG)
- 5 shallot, sliced
For blended ingredients
- 3/4 cup cooking oil
- 1 ounce dried chili
- 3 onion
- 3 shallot
- 3 cloves garlic
- 1/2 tbsp shrimp paste
Directions
Put in rice grain, water, salt, coconut milk, pandan leaves and AJI-NO-MOTO® into a rice cooker and let it cook.
Heat a pan and sauté blended ingredient until oil rises to the top.
Pour in tamarind paste and hot water mixture, stir well.
Add in AJI-NO-MOTO®, sugar and salt.
Simmer for 15 minutes.
Add in sliced shallots and cook until they soften.
Serve cooked rice together with sambal, hardboiled egg, cucumber, peanut and anchovy.
