Musakhan (Sumac Chicken)

Ingredients

  • 3 pounds (1.3kg) chicken thigh
  • 4 1/2 pounds onions
  • 1 cup Sumac
  • 2 cinnamon sticks
  • 6 cardamom
  • 3 tbsps salt
  • 4 cups olive oil
  • 2 tbsps mixed spice
  • 6 Arabic pita bread
  • 2 tbsps Ac’cent or umami seasoning AJI-NO-MOTO® (MSG)
  • 4 cups water
  • Cashew nuts for garnish

Directions

  1. Fry onions with olive oil.

  2. Add sumac, mixed spice, salt and AJI-NO-MOTO®, and set aside.

  3. Boil chicken and onions in water with salt, cinnamon sticks, cardamom and AJI-NO-MOTO® for 15 minutes.

  4. Set aside chicken pieces on a tray.

  5. Combine olive oil and sumac, and put it on the chicken.

  6. Bake chicken for 20minutes in oven (180°C/360℉).

  7. Layer Arabic pita bread, fried onions and chicken pieces.

  8. Garnish with cashew nuts and onions.

  9. Serve!
