Umami Stuffed Shiitake Mushrooms

  • 6 mushrooms
  • 1 tbsp flour
  • 3 ounces (100g) pork/beef meat, ground
  • 1/2 egg
  • 2 tbsps onions, minced
  • 2 tbsps breadcrumbs
  • Pinch of Ac’cent or AJI-NO-MOTO® (MSG)
  • Pinch of salt
  • Pinch of pepper
  • 1 tbsp oil


  1. Carefully break off stems and sprinkle flour on mushroom caps.

  2. In a bowl, put all of the ingredients for stuffing and mix until it gets a little sticky. Fill mushroom caps with filling.

  3. Heat oil in a pan, put mushrooms with the filling side down and fry until it gets brown. Fry another side for 2 minutes.
